Bean salad

I make this salad quite often at my home and also when we have a huge gatherings. It makes a great appetizer. It is full of beans and finely chopped vegetables. This salad is rich in fiber and keeps you full for a longer time. You can make it to impress the mild eaters! 




Here are the ingredients Canned mixed beans- 2 cans Canned sweet corn- 2 cans Finely chopped onion, green peppers, red peppers, yellow peppers, tomato( deseeded), semi ripen Mango For dressing- zesty Italian  Salt to taste
Preparation  Open the cans and combine corn and beans in a colander and rinse them under cold running water. Drain all the water and add them to a big mixing bowl. Add all the chopped vegetables and add two cups of zesty Italian dressing. Add salt to taste and refrigerate at least an hour before serving. You can add or remove the vegetables based on your taste, I love adding freshly chopped cilantro and mint.

Brown rice Avacado Masala dosa

Brown rice has become one of my favorite item now a days. My husband doesn’t like change in a recipe, he loves his authentic dosas. The other day I didn’t let him know that I put brown rice instead of white rice for making dosa batter, when I served the steaming dosa from pan he appreciated me very much for the soft dosas. If this recipe got my husbands approval then this should be a full proof recipe to share with anyone. I used Avacado filling instead of regular potato filling to make masala dosa, as I love Avacados so much. 


For brown rice dosa batter Brown rice 2 cups Urad dal 1.5 cups Fenugreek seeds 1 ts Salt 2 tbsp
For Avacado filling  Avacado 1 Finely chopped onion 2tbsp Finely chopped green chili 1ts Salt to taste Lemon juice 1 tbsp Optional - chopped tomato and cilantro 
Method: mix all ingredients and put aside before making dosa. You cannot store this for next day as the Avacado goes bad. You must use it immediately after making it.

Banana Oatmeal

Oats are one of my favorite recipes because they are healthy and filling. I use whole grain rolled quaker oats these are comparatively better in nutritional value than the quick cooking oats. The recipe is very simple and can be prepared in 10 minutes. Banana oats are my favorite breakfast as it keeps me full until afternoon. This recipe is also good for the diabetic patients as heart patients. Oats are very right option for a weight loss, because of low glycemic index and high fiber content. They are anti inflammatory and rich in antioxidants. I prefer having my breakfast after workout but i have to drop my kiddo at the school and go to gym, so I usually have breakfast before my workout. 
Ingredients  Half cup of whole grain rolled oats ( old fashioned oats) Water 1cup One Banana  Nuts optional

Healthy Eating and Weight Management

I know I have been away from blogging for a while now. But I am back with a bang, I promise I will post at least one recipe a day. I have a 3yr old who keeps me on toes, now that she started going to pre-school I have little spare time for me. I think we women forget to take care of ourself after we have a baby. it is always good to start it now because people say better late than never.  I registered at YMCA ( Gym) which is very near from my house even though I have treadmill at my home, as I know I will force myself to go an workout as I pay for it. I stated cooking healthy meals for me, been logging in the calorie intake and tracking my workouts. I will keep posting my updates.
I have lost 3pounds in 3weeks, which is not bad for a beginner. I will write a detailed post on my workout and meal preps. Keep peeping into my blog until then!!
