Mango Fried Rice (Mamidikaya pulihora)





Mango fried rice also known as mamidikaya pulihora in our regional language. After a very long time I was able to bag some raw mangoes form the Indian store. I am glad that I found them, because I was craving for this rice since last month. I didn't even remember when was the last the time I had it. Mango pulihora is easy to prepare and delicious in taste.

Serves: 2; Total time: 30min
Ingredients
Mango medium size- 2
Cooked rice- 3 cups
Green chili- 5 in number
salt to taste
Chana dal (Senaga pappu)-1tbsp
Urad dal (Minapa pappu)-1tbsp
Cumin seed- 1/2tbsp
Mustard seeds- 1/2tbsp
oil- 2tbsp
Cashew nuts-few (Optional)
curry leaves (optional)
Turmeric- pinch

Method:
Cut mango and grind it to a coarse paste along with little salt and green chili. Heat oil in a pan and add Chana dal and urad dal and fry till they turn light brown. Now add mustard seeds, cumin seeds and wait till they splatter and add green chili, red chili, cashew nuts and curry leaves (optional). When the green chili is cooked add in turmeric and salt and mix well, now add mango paste and mix well. Cook for 5min stirring in between under medium flame. Now add rice and mix well, cook this for about 1min and turn off the stove. The pulihora is ready to serve. I hope you like my recipe.

  10. I had never heard about mango and rice recipe together. This is new and exciting for me. I like added flavour of cashew nuts and curry leaves. I will consider this as Healthy Food Recipes in my upcoming book.

We can play with the bread bun recipe. Every one has their own version of making them. Ingredients:
Makes 8 medium size buns
Milk-1/4cup
Self rising flour-3cups(When measured with 160ml cup)
Salt-1/4tea spoon
Butter-1 cup(melted and measured with 160ml cup)
Egg-1+1 for wash (coat on surface of unbaked bun)
Dry active Yeast-1tbsp
Sugar-2tbsp


Directions:

Dhokla with the readymade flour available in the market

Dhokla is one of the dish I always wanted to try, this time I bought some ready made dokla flour form the "Patel brothers" one of the Indian grocery store in our near by area. The ingredients on the pack say that it contains besin (Gram flour) and rice flour. I was little confused, about the kind of ingredients that goes into the recipe. Later I did a little research and came up with my own recipe. It worked, dokla came out wonderfully. I never tasted dokla before, but now after making this yummy and healthy Indian flour cakes, I regret for not tasting them before. Form now dokla always stays in the weekly snack menu of our home.

I feel so dumb sometimes, because I bought dokla flour but forgot the fact that I do not have dokla plates. If your case is same like me, give me "high-5"!! No problem you can use the idli plates instead. Problem solved!  Now coming to the recipe.
