Easy Indian Snack- Maida and Besin Biscuits

This is the first time I made this yummy and crispy snacks. My mother used to make them and serve hot when we return from our school. We used to munch on them, I enjoy eating them with little fresh and finely chopped tomatoes and onion seasoned with salt and pepper. They are just like mexican Nachos with Indian flavor. This is a simple yet delicious recipe. If you are looking for an instant Indian spicy and crispy evening tea time snack this should be perfect for you! This can be made during festivals too!!! It is a long term storage snack, it will stay good for 15days or more if you store in air tight container.

Ingredients
Gram flour/Besin/Senaga Pindi-1 cup
Maida/All purpose flour-1 cup
Omah/Ajwain/ carum seeds-1/2tbsp
salt-1tbsp or to your taste
Red chili flakes-1tbsp
oil for deep fry

Method
Mix all the ingredients together with little water. The consistency of the dough should be like chapati/roti dough. Once the dough is ready take 2tbsp of oil and spread it on the surface of the dough. This way the dough remains moist. Keep it aside by covering with lid for about 10min. Now separate the dough in to 8 equal parts and roll like roti (Medium thin) cut it with a knife into diamond shaped pieces. Fry them in oil under medium flame. Flip them and cook on other side. Do not fry them under high flame, by which outer surface will be burned and inner remains raw. The biscuits will become tasteless and soft. Makes 8 medium size buns
Milk-1/4cup
Self rising flour-3cups(When measured with 160ml cup)
Salt-1/4tea spoon
Butter-1 cup(melted and measured with 160ml cup)
Egg-1+1 for wash (coat on surface of unbaked bun)
Dry active Yeast-1tbsp
Sugar-2tbsp

Dhokla with the readymade flour available in the market

Dhokla is one of the dish I always wanted to try, this time I bought some ready made dokla flour form the "Patel brothers" one of the Indian grocery store in our near by area. The ingredients on the pack say that it contains besin (Gram flour) and rice flour. I was little confused, about the kind of ingredients that goes into the recipe. Later I did a little research and came up with my own recipe. It worked, dokla came out wonderfully. I never tasted dokla before, but now after making this yummy and healthy Indian flour cakes, I regret for not tasting them before. Form now dokla always stays in the weekly snack menu of our home.

I feel so dumb sometimes, because I bought dokla flour but forgot the fact that I do not have dokla plates. If your case is same like me, give me "high-5"!! No problem you can use the idli plates instead. Problem solved!  Now coming to the recipe.
