Tomato soup with dry bread crumbs- croutons

• Tomato soup and dry bread crumbs the croutons are my favorite combination. In India this is the main starter on all occasions. I'll order it straight away,with out peeping into Menu card in any restaurant in India. The tangy combo with crispy croutons makes you to fell like heaven. Little spice up is OK but for me mild spices is good.Here I post this yummy soup with mild spices. You can add celery if you wish, this is the best soup for weight watchers. In India celery is available in stores. So, I did not mention celery.

• Ingredients(serves 4)
• 1 tablespoon vegetable oil
• 1 cup chopped onion
• 2 cloves  of garlic, minced
• 1/2 cup chopped carrot
• 6 large crushed tomatoes
• 3 1/2 cups vegetable broth(You can use water, if not)
• 1 teaspoon salt
• 1/2 teaspoon dried thyme
• 1/2 tbsp black pepper powder

• Directions:

• Heat oil in thick bottom vessel, saute onion and garlic until onion is tender under medium flame. Add carrot cook 7 to 9 minutes until tender, stirring frequently. Stir in tomatoes, broth, salt and pepper. Reduce heat to low. Cover and simmer 20 minutes, stirring frequently.
